Ingredients
- 5–6 frozen raw soft pretzel rolls or unbaked pretzels (not pre-baked)
- 1 tin (about 400g) chopped tomatoes
- Vegan cheese (amount to taste)
- Black olives, sliced
- Cherry tomatoes, halved
- 1 yellow pepper, sliced
- 1 small red onion, thinly sliced
- Fresh basil leaves
- 1 tsp dried oregano
- Salt and pepper
- Balsamic vinegar to finish
Method
- Thaw the pretzel dough 30–40 minutes before you start. Preheat oven to 180°C (350°F).
- On a lightly floured tray, place five pieces of dough side by side and press the seams to join them. Use the sixth piece to form a rim; moisten the edge and sprinkle a little salt.
- Roll the joined dough to about 3 mm thickness (it will rise during baking).
- Spread the tinned tomatoes evenly over the dough. Season with salt, pepper, basil and dried oregano.
- Scatter vegan cheese over the sauce, then add sliced red onion and other base toppings.
- Arrange cherry tomatoes, yellow pepper and black olives to create your chosen team colours.
- Bake 15–20 minutes, until the rim is golden and crust is firm. If still soft, bake a few minutes longer.
- Finish with a drizzle of balsamic vinegar and freshly ground pepper. Serve hot.
